I have been curious about who the models on the cover of these books are. Can anyone help me out?

Pretty sure it's just art. There may be inspiration behind the artist somewhere, but I doubt it's direct modeling. Besides, they got the details wrong. :(

Not offhand, sorry, the kindle edition doesn't have the artist credits listed. Maybe someone with the paperback can check.

Ghost of a Chance says its cover was done by Don Sipley. I'd wager he did Ghost of a Smile as well.

Artists are usually sent a page or two of relevant text from the story to base their art work on.
